The Month of March

So, March didn’t go as well as I pictured it in my mind. I can’t seem to get past the 5-7 lb mark. I guess keeping it off counts for something too, and I will continue to tell myself that until I lose more!

I pictured March coming and me doing excellent, exercising constantly, the roads here in Seneca clearing off so I could run around the golf course, eating healthy, avoiding Cadbury Creme Eggs at Easter….. None of those happened. A trip out of town, a death in the family, more winter storms, and of course Easter kind of disrupted my flow. So… now I have high hopes for April!!! ??

Here is a wonderful recipe for Blue Hake that I found and my husband actually really likes it too!

Blue Hake with Balsamic Syrup

Balsamic Syrup:

In a small saucepan, bring:

1/3 cup Splenda (this helps cut down calories although I am trying to cut out the fake sugar – I haven’t tried this recipe with real sugar yet)

½ cup Balsamic Vinegar

1 tsp coarsely ground black pepper

…….to a boil until reduced by half. This is basically a simple syrup.

Grilled Blue Hake (I get mine from Schwan’s):

4 (4 oz.) Blue Hake Fillets (you can use other fish if you would like)

Juice of one lemon (or bottled lemon juice)

Salt and Pepper

1.)Salt and Pepper both sides of fillets. Place in a large Ziploc bag and squeeze in lemon juice. Let marinate in refrigerator for 2 hours.

2.)Grill for 4 minutes or until flaky. I don’t have a George Foreman, so I just grill on a piece of tin foil on the grill.

3.)To serve, spoon warm syrup over fillets.

Per serving: Calories: 85 Fat:0 Protein: 18 Carb: 0

I usually serve with a yummy green salad, rice, and a vegetable like asparagus or something.
