RIP T-bone and Rumproast

Our wandering cows, T-Bone and Rumproast, have reached their final destination. At least one of them has. I picked him up this week at Russell’s, all nicely packaged, boxed and frozen. The other one is still at Russell’s, boxed up for some other folks; hopefully they will enjoy our first attempt at raising livestock.
I confess I missed the slaughter part – had to go to work. Really.
But Les was there when the Russell’s crew came out. He said they were quite efficient, and he was impressed at how quick the process was – from cow to carcass in nothing flat.
Now we have a freezer full of beef. Looking forward to tasting some locally grown, locally pampered, locally processed beef. Tracy at Russell’s says it looks like we made it to “choice” – am guessing “prime” will be a stretch for us, unless we keep the next bunch from wandering.
